Mayan Cafe has been a beloved part of Louisville's culinary scene for 17 years, founded by Chef Bruce Ucan and co-owner Anne Shadle. Bruce’s journey began in 1997 when he opened his first restaurant in NuLu, driven by his desire to bring the authentic flavors of his Mayan heritage to the city. With a passion for creating dishes that reflect the true essence of Mexican cuisine, he sought to move beyond the typical perceptions of Mexican food like chips and queso. Instead, he introduced Louisville to the vibrant, flavorful, and deeply rooted traditions of Mayan cooking.
A DEDICATED AND DIVERSE TEAM
At Mayan Cafe, the mission is simple yet powerful: to serve high-quality, authentic Mayan cuisine using locally-sourced ingredients from Louisville's farms whenever possible. The restaurant is also dedicated to supporting Black-owned businesses within the community. Internally, Bruce and Anne have built a culture focused on creating a safe, positive, and predictable work environment for all staff members, where kindness and mutual respect are at the forefront. The team comprises 33 dedicated individuals, 19 of whom are women, who all contribute to the welcoming atmosphere and exceptional dining experience at Mayan Cafe.

Despite the challenges of the pandemic, the restaurant's resilience and dedication to its team have been its greatest achievements, and the focus remains on fostering an environment where everyone thrives.
